Homemade noodles are a staple among the Amish. They require few ingredients and, really, homemade noodles are not that hard to make. Maybe a little time-consuming. Some Amish are aided by hand-cranked "noodle makers" as opposed to cutting them all out by hand. But there are plenty of Amish cooks who just pick up a knife and cut them out by hand. Hand-made noodles are almost considered an art for among the Amish. So there are many variations on Homemade Noodle Recipes.

Whenever I think about noodles, I'm reminded of an old, funny family story from when I was a child. I was traveling in Italy with my parents and brother, and no one in our family spoke a word of Italian. As I remember the story we were driving around in an area of Italy renown for its green-tinted homemade noodles and, famished, my parents stopped and what they thought was a restaurant. Someone said something to them in Italian and waved us in. We ate what turned out to be super homemade noodles and only found out later, it wasn't a restaurant, it was a convent. Oh well, the noodles were, apparently, super. I don't remember that, I was probably only about 6-years-old.
Scratch-made noodles are an age-old art. Amish moms learn homemade noodle recipes from their moms and then pass the craft down to their daughters who pass it along to theirs and so on. 🍝 Homemade Noodle Ingredients
- 3 eggs
- About 2 cups all-purpose flour
- ½ teaspoon salt
📋 Instructions
- Beat 3 eggs until frothy.
- Add flour and stir until of dough texture.
- Knead until smooth.
- Turn into floured cutting board.
- Roll dough, turning often until thin.
- Let noodle dough dry for 45 minutes.
- Turn dough and dry ½ hour.
- Cut into noodles size.
- Drop into boiling beef or chicken stock, reduce heat and cook at rolling boil about 20 minutes. Season to taste

Interesting you asked that because they did not go with me, but Aster asked this evening if she could go with me on my next trip to Amish country, so I will happily take her next time. The only reason I didn't this time is they just don't usually like long car rides...she she starts grumbling after driving 15 minutes sometimes
