Chocolate Shortbread Cookies

Raise your hand if you love shortbread!!! I, for one, love shortbread cookies and today I’m sharing with you one of my favorite recipes for easy chocolate shortbread cookies. I love how crispy, buttery, and melt-in-your mouth these cookies are. They aren’t super sweet either, which means eating them for breakfast with your favorite tea is totally fine in my book. I like this recipe, too, because instead of having to make pan after pan of drop cookies, you just make one big cookie, score it into wedges, and then cut it while it’s still hot. One giant cookie is always a good idea.

A simple recipe with a short list of ingredients is fun to keep on hand so that when the kids are begging for a baking session or you get bitten by the baking bug, you’ll have something quick and easy to put together without much planning or a trip to the store. Sometimes simple just wins!

Eat these with your coffee or tea for a mid-afternoon snack because they are so simple without being overly sweet. You are going to make this recipe again and again.

Are these shortbread cookies sweet?

These cookies aren’t super sweet, just FYI. Like most classic shortbread cookie recipes, it’s light on sweetness. Just so you know what to expect.

Can I substitute other sugars for the confectioners or powdered sugar?

Don’t try to sub other sugars for the confectioners or powdered sugar, that helps create the shortbread texture of the cookie. I also used extra chubby “sparkling” sugar in place of the granulated sugar on the top and I love it. I use it often and it’s fun to have on hand.

Can you freeze homemade shortbread?

Once the cookies are cooked and cooled off they can be properly stored and put in the freezer. You can layer the cookies, but I suggest layering them with parchment paper to keep them from sticking together.

Description

Easy chocolate shortbread are lightly sweetened, crisp, buttery cookies made with just 6 simple ingredients.

Ingredients

Scale

  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 16 tablespoons unsalted butter, softened
  • 1/2 cup confectioners sugar
  • 1 tablespoon granulated sugar

Instructions

  1. In a medium bowl, whisk together the flour, cocoa powder, and salt.
  2. In a large bowl, beat together the butter and confectioners sugar with an electric mixer on medium speed for 3 to 6 minutes. Scrape the sides as needed – the mixture should be light and fluffy.
  3. Reduce the mixer speed to low and slowly add the flour mixture until combined, about 30 seconds.
  4. Using you hands, press the dough in a ball in the bowl. Transfer the dough to a lightly floured surface and knead it until the dough is very smooth, about 3 minutes (the heat from your hands helps the butter to melt a bit and the dough to come together).
  5. Press the dough into a round disk, place another piece of parchment paper on top, and roll it out into a 9-inch circle, about a 1/2 inch thick.
  6. Transfer the dough and the parchment paper to a parchment-lined baking sheet (the double layer of parchment helps to absorb some of the extra grease in the cookies).
  7. Crimp the edges of the circle with your finger and thumb. Use the tines of a fork to poke holes in a circular pattern all over the dough. Then use a small knife to score the dough into 16 wedges (don’t cut all the way through the dough).
  8. Cover the chocolate shortbread with plastic wrap and refrigerate for 20 minutes (this helps the cookie to not shrink while baking).
  9. Adjust the oven rack to the middle position and preheat the oven to 300 degrees. Sprinkle the shortbread evenly with the granulated sugar. Bake the cookie for 40 minutes.
  10. When the cookie is done baking, place the baking sheet on a wire rack and use a sharp knife to cut through the scores, separating the wedges, while the cookie is still hot.
  11. Let cool on the baking sheet for 10 minutes and then transfer the shortbread to a wire rack and let it cool before serving, about one hour.

What is the difference between butter cookies and shortbread cookies? ›

Compared to butter cookies, shortbread uses a higher ratio of butter to flour, and is baked at a lower temperature. This gives it its signature delicate consistency that crumbles in the mouth when bitten. It's also often baked in a pan and cut up after baking, rather than being cut into shapes before baking.

What are common mistakes when making shortbread? ›

The most common mistakes when making shortbread are over-working the dough, and incorporating too much flour. The less you work the dough, the more crumbly and melt-in-your-mouth your shortbread cookies will be.

When making shortbread What must you not do? ›

The key with shortbread is not to overhandle it. Make the dough exactly as instructed, but don't mess around making shapes or over rolling the dough - you will end up with delicious but tough biscuits. Stretching and pulling the dough activates the gluten in the flour, making chewy cookies and not crisp ones.

Should you refrigerate shortbread dough before baking? ›

Place the dough in the fridge to chill for about 1 hour, or longer. Preheat your oven to 325°F / 163°C. Place the pan in the center of the oven, and bake the cookies for about 45 – 60 minutes, until the edges are golden brown. A 9 inch pan may only take 40 – 45 minutes, and an 8 inch pan may take up to 60 minutes.

What is the difference between Scottish shortbread and regular shortbread? ›

Traditional Scottish shortbread is a simple recipe made with sugar, butter, flour, and salt. Other shortbread styles will include leavening agents like baking powder and baking soda, which makes them crisp instead of crumbly like traditional Scottish shortbread.

Is salted or unsalted butter better for shortbread cookies? ›

Butter – You'll need salted butter that's at room temperature. It can take anywhere from 30 minutes to 1 hour to bring the butter to room temperature, so make sure you give yourself enough time. If you don't have salted butter, unsalted butter will also work, simply add about ¼ teaspoon of salt to the cookie dough.

What do Americans call shortbread? ›

Shortbread isn't a bread, it's what we Americans call a cookie.

Why use unsalted butter in shortbread? ›

Use unsalted butter for balanced flavour. Unsalted butter was traditionally used in baking because it was a superior product to salted - salt is used as a preservative so unsalted butter was thought to be fresher.

What are the disadvantages of shortbread? ›

Sugar provides a fast source of energy. There are rarely any artificial additives. Cons: Shortbread is a weight watcher's nightmare because it is extremely high in saturated fat and calories. Saturated fat is the 'bad' fat which is linked to artery-clogging high cholesterol and heart disease.

Should butter be cold for shortbread? ›

Should butter be cold or room temperature for making shortbread? Always start with cold butter straight from the refrigerator. This will keep the dough from warming up, making it greasy and difficult to roll out.

What happens if you put too much butter in shortbread? ›

Greasy mess: Extra butter means more fat, making the dough greasy and difficult to handle. Spreading like crazy: Cookies lose their shape, spreading thin and flat instead of staying nice and round. Uneven baking: The excess fat can burn easily on the edges while leaving the center undercooked.

What happens if you don't chill shortbread dough? ›

But in this shortbread cookie recipe, it really makes a difference. Chilling the dough helps the cookies hold their shape. If you don't chill your shortbread dough, the cookies will spread as they bake.

What is the best brand of butter for shortbread cookies? ›

Some popular butter brands include:
  • Kerrygold: This Irish butter is made from grass-fed cows and is known for its rich, creamy flavor.
  • Plugra: This European-style butter is made with a higher butterfat content, which gives it a rich, creamy taste and a smooth texture.

Why do shortbreads poke holes? ›

The word "bread" comes from "biscuit bread" which was made from leftover bread dough that was sweetened and dried out in the oven to make biscuits. Why do you poke holes in shortbread? The holes allow the moisture to escape during baking and more even heat distribution. This helps dry out and crisp up the cookies.

Why do you put an egg in shortbread? ›

This unexpected addition will make buttery confections like shortbreads and shortcakes even more tender and flaky. “Biscuits should be crumbly, buttery and sweet,” reads a headnote for a cinnamon sugar-spiced shortbread recipe in the Ritz London Cookbook.

Why did my shortbread cookies come out hard? ›

These proportions make shortbread a lot more dense compared to cookies, which means you could easily end up with shortbread that's hard and crunchy rather than buttery and crumbly. Per Cooktop Cove, this can occur when the dough has either been overworked or not chilled for long enough.

How do you keep shortbread crust from sticking? ›

Shortbread Crust: Lightly butter, or spray with a non stick vegetable spray, an 8 or 9 inch (20-23 cm) tart pan with a removable bottom.

How do you keep shortbread dough from crumbling? ›

To fix this, you can add more fat to the dough. This can be in the form of butter, shortening, or even olive oil. Just add a little at a time until the dough comes together and is no longer crumbly. You may also need to add more liquid, such as milk or water, to get the right consistency.
